| National Pancake Day Roper style |
Saturday February 28th was National Pancake Day. Somehow I missed that holiday (my iPhone doesn't list it as a true National Holiday though it does list John F Kennedy's birthday as one, go figure).
I didn't learn about the holiday until Tuesday afternoon and by then I was already set to make French toast for dinner. To compromise I cooked the French Toast in the waffle iron which turned out quite well. Happy National Pancake Day!
